Sunday Bake Club: Banana Pancakes


So, I guess pancakes don’t really count as baking but they are still a great weekend treat. These Banana Pancakes are even better as they’re full of goodness and, if you’re following Weight Watchers, they’re low in points too! This is a really simple recipe but preparing your fruit can be time-consuming so you might want to rope someone in to help. Or else be really lazy and just buy prepared fruit!

I decided to experiment a little bit this week and only used egg whites, rather than the whole egg. This meant that the entire recipe came to 0 SmartPoints but the pancakes seemed a lot runnier than usual and burned much more easily. I think I’ll probably stick to using the yolks too in future, making this recipe a Weight Watchers (and tummy!) friendly 4sp. The pancakes were still delicious, despite the missing yolks, and it’s good to know there is a tasty and very filling alternative for days when you can’t even afford to spare 4sp for breakfast!

Ingredients

  •  2 medium eggs
  • ·         1 banana
  • ·         Butter flavoured cooking spray (or real butter)
  • ·         Fresh fruit to serve


Method
1.       Peel the banana and mash in a bowl using a fork. Crack in the eggs and mix until well-combined.
2.      Spritz a frying pan with the cooking spray (or else melt real butter) and heat over a medium heat. Once the pan is hot, ladle in the mixture to the required size. I usually make mine a bit smaller than a Scotch pancake and have two or three frying in the pan at the same time.
3.      Flip the pancakes in the pan to avoid burning and to ensure they are cooked thoroughly.
4.      Repeat until all the mixture has been finished.

5.      Serve with your choice of fresh fruit. I like using berries or citrus fruits such as pineapple or satsumas, the juicier the better!
