This healthy dinner
is quick and easy to make. And the filo pastry makes it feel just a little bit
naughty, which is all the incentive I need when planning what to eat!
Serves 4
Ingredients

4
salmon fillets
·
150g
spinach
·
4
tablespoons quark/soft cheese (or low fat mayonnaise)
·
4
sheets filo pastry
·
Butter-flavoured
cooking spray
·
1
teaspoon poppy seeds
·
Salt
& pepper
·
Green
side salad
·
Sweet chilli
dipping sauce to serve
Method
1.
Preheat
your oven to Gas Mark 5/190*C (170*C for fan ovens).
2.
Place
the spinach in a lidded saucepan (or a microwavable container if you would
prefer to steam it in the microwave). Add 2 tablespoons of water and seasoning.
Cover and simmer until the spinach has wilted, about 2-3 minutes. Drain well.
3.
Divide
the spinach over the four salmon fillets and top with a quarter of the
quark/cream cheese/mayonnaise.
4.
Fold a
sheet of filo pastry in half and place a salmon fillet in the centre. Spray the
pastry lightly with the cooking spray and wrap it around the salmon like a
parcel, tucking the sides in first. Repeat for all the salmon fillets.
5.
Spritz
the tops of the parcels with cooking spray and sprinkle with the poppy seeds.
6.
Bake
for 20 minutes, until the pastry is crisp and golden. Serve with a crisp, green
salad and a serving of sweet chilli dipping sauce.
